- Building & Trade Permits (The Foundation): Issued by agencies like DOB (DC), LDS (Fairfax), or DPS (Montgomery County). This covers the structural build-out, electrical upgrades (crucial for commercial kitchens), plumbing for grease traps, and mechanical/HVAC systems.
- Health Department Permit (The Chef’s Priority): This ensures that your kitchen layout meets sanitation standards, including proper hand-sink placement, non-porous surfaces, and proper refrigeration airflow. As a Chef-owned firm, we design for this from day one to ensure a “Pass” on your pre-opening inspection.
- Fire Marshal & Life Safety (The Engineering Side): This covers your Type I Grease Hood, fire suppression (Ansul) systems, and emergency egress. We provide the Engineering data required to prove your ventilation can handle high-heat cooking.
- Certificate of Occupancy (C.O.): The final “Green Light.” This is the document that legally allows you to open your doors to the public once all other inspections are signed off.
- Specialty Permits: Depending on your concept, you may also need a Public Space Permit (for sidewalk seating), a Signage Permit, or an ABC/Liquor License (handled by Virginia ABC, Maryland Board of License Commissioners, or DC ABCA).
